The system we used took a lot of 3 4” Ring Binders Why so many? Part of HACCP is you have to have a person on duty during each shift that can answer problems and know how to figure out what to do. In our case, I used a filing system I learned about in the US Air Force so many years ago. Using the Index, your Deputy can find anything. – So can an Inspector!
You also need a lot of forms and store the completed forms. Like in the Air Force, “if it was not written down, it did not happen”. Thus you have the blank form, and completed reports, and you use a reminder sheet to print more forms when you are down to 2 weeks left. Let’s make it easy, not so secret than that nobody knows where anything is!

Now can you see your HACCP coming around to where it works? It is easier than you thought. Another point is after my 24 hours by 5-day plant was trained and on HACCP it changed everything. The bakery was clean and I did almost nothing to keep it that way. My time was really freed up to work on selling, purchasing, and training. – But almost ZERO nagging or anger. Our productivity increased 20% in a pure production bakery. Money in the bank!

  • • Find a College Intern – food science is very good. They are logical, understand projects, type so much faster than we do, and must do an Intern Session before graduating.

Facts:

  • • If you have a customer who wants to buy from you but insists that you have a HACCP Program, usually will accept the fact that you have started working on building a program and go ahead and give you their business.
  • • When you are ready for your 1st 3rd Party Inspection via Silliker, AIB, or another service, take your first inspection as a Training Inspection – What that means is if you pass you take it as a Regular Inspection. If you do not, it does not go against you.
